We sat down with the founder to hear the story behind this unique culinary gem, discover what makes the island so special, and learn about the flavors and experiences that await every visitor.

1. Can you tell us the story behind Apospero and how it all began in Amorgos?

Well, it all started a long time ago. Amorgos had always been my special place. I used to spend my vacation there every year, and I had already fallen in love with the island when I started dreaming. My dream was a place of my own and a life more peaceful than in the big city. So the dream came true in 2018, after research and effort. As far as the name is concerned, this is a very special memory. It was May 2018. We were all on fire back then, working hard for the restaurant to open as soon as possible. Still, I didn’t have a name for it. At some point, I took a break, I sat on the roof of the church and started reading a poem. The sun was about to go down. The colours of the sky were breathtaking. I was enchanted. At that point, the Greek word ”Apospero” came into my sight while reading the poem. This word ”got me”. However I didn’t know the meaning. I searched for it to find out that Apospero means the colours of the sky literally during sunset. There it was. I had a name now.

2. What makes Amorgos unique compared to other Cycladic islands, from your perspective as locals?

Well, I am not a real local, but I have chosen to live here. This island has a kind of magic. It either enchants you in a good way and keeps you here, or it makes you wanna go away. Well, in my case, I was captured. One of the reasons Amorgos is so special, in my opinion, is the fact that until today, it remains authentic, not only culturally but also when it comes to the people. The local people maintain the dignity and hospitality of our ancestors, and this is a blessing in the times of today. When it comes to the nature part, Amorgos is stunning and has an enchanting and wild beauty. I cannot put it into words; you need to see it through your own eyes.

3. How does Apospero reflect the culture and traditions of Amorgos in its food, design, or philosophy?

In our restaurant, you will taste the island in a unique way. Amorgos is the inspiration and the source. Apospero reflects the philosophy of our island by creating and offering authentic tastes inspired and born by Amorgian products and ingredients. The island culture is in the meraki our team puts in the cooking, and in the warm hospitality we try to create from our hearts. When it comes to the tradition, it’s very important to mention here that Apospero does not offer traditional Amorgian cuisine. Our taste feels like home, but with surprises and twists.

4. What seasonal or signature dishes should visitors absolutely try when they come to Apospero?

Hmm, this is a difficult question for me, as every dish in our restaurant is signature in an attempt to accommodate different tastes and preferences. However, in my very personal opinion, you shouldn’t miss our fresh tuna fillet and our ceviche, which is made daily with fresh fish of the day. If you are on the meat side, then you have to try our own version of the Amorgian goat, served in pulled form with paccheri pasta and a delicate creamy Gruyère sauce with truffle oil.

5. How do you work with local producers and ingredients to keep things authentic?

We need to maintain the quality of our raw materials even during the peak of the season, when it’s the hardest time. We cooperate with local producers such as greengrocers, farmers, and markets. We have to keep up with their own supply capability, having in mind that Amorgos is an off-the-beaten-path island. As a result, we sometimes choose to sacrifice quantity over quality. Nevertheless, this is how we keep things authentic in Apospero.

6. Do you have a favorite hidden spot or experience on Amorgos that you recommend to travelers?

Well, although this spot is not considered hidden, I would definitely say it is a hidden gem, recommended especially to those who love exploring. The place is called Stavros, and it is located in the northern part of the island. You cannot reach it by car, only on foot, by following a trail which starts from Lagada Village. At the end of the trail, there is a beautiful small church dedicated to Stavros, which is the Greek name for Holy Cross. The view is spectacular, and the trail is of unique wild beauty. Although it sounds a little bit dangerous, it is quite safe, as long as somebody has just a little experience in trails and of course, a passion for exploration.

7. Looking ahead, what are your hopes for Apospero and for tourism on Amorgos?

Looking ahead, my target is that every year we evolve and grow, in order to continue offering a unique experience to our visitors. In the meantime, we are at the beginning of creating a new venue, a small sibling, as I like to call it. It is too early to reveal more, but we plan to create a place that will host art and culture, accompanied by the traditions of the island. When it comes to tourism in general, I believe that our island needs a season more expanded so that all the local and small businesses survive on one hand and, of course, thrive on the other. I believe we already host an adequate number of people regarding the capacity of our island. It is important that Amorgos keeps her identity authentic and that we avoid further alteration. What we need is to expand our season, so that travelers can explore and enjoy the beauty of our island in other months too. Every month here has a unique essence and beauty, and this is definitely worth a visit. Of course, by expanding the season, our wish is to ensure a more sustainable living for the permanent residents.
